Singh stabbed her repeatedly in a ”brutal attack” with a 7.5in (19cm) kitchen knife in Lavender Hill, south west London, the Old Bailey heard.
The 25-year-old, of Southall, was said to have been ”infatuated” with Miss Dorman and had a large tattoo with her name on it on his back.
Early in 2008 she ended the relationship but he bombarded her with hundreds of text messages a week, said Richard Whittam QC, prosecuting.
Jurors were also told about letters proclaiming Singh’s love, one of which said: ”Fish can’t live without water. I can’t live without you.”
Mr Whittam said: ”It appeared to Gemma and to her mother that Singh was harassing her, and to use common parlance, stalking her, following her.”

Mr Whittam said Singh, who was known as “Vicky”, had met Miss Dorman when she worked for an escort agency and their relationship continued after she left the job in June 2007.
